The Green Sage is part restaurant and part ecological statement in which every aspect of the Cafe is created in eco and health conscious methods and products. From the solar panels on the roof used to heat most of the hot water needs to a composting and recycling station that reduces up to 80% of waste that would otherwise be dumped into a landfill. 'To go' containers are almost all compostable, locally produced non-toxic, biodegradable Earth Paint and even a waterless urinal that conserves up to 40,000 gallons or water each year. And this is only a partial list of what owner Randy Talley has accomplished through his 'green' themed Coffeehouse.
Believe it or not, that isn't the best part. Wait until you try the food. Yes, of course it's health conscious but you'll want to return and try more - it really is that good. Vegan, Vegetarian and Gluten Free choices are available. The burger sounded good however I was intrigued by the Black Bean Burger. Served on a wheat bun with lettuce, tomato, red onion and Vegenaise; I found it very impressive. At the table you will find organic ketchup, mustard and hot sauce to complete the theme and offer you any extras you may need to doctor your sandwich. I chose a salad as my side and was happy to find a mix of leafy lettuce, sprouts, cucumber, grape tomato halves, shredded carrot and red beet served with a tasty ginger vinaigrette.
