Ruth's Easy to Make Pecan Pie

There's nothing like a good pecan pie to satisfy your sweet tooth.  Even better, this is a recipe that will satisfy your family's pecan pie appetite at all the special holidays and events throughout the year.  It's easy enough to make without a special occasion on the horizon as well.

This is a recipe from the Schwartz Family Cookbook from Ruth Blount but my mom used this as well.  If you're making your own pie crust, click here.

1 Large egg, well beaten
1 cup Karo white corn syrup
½ cup Sugar
1 cup Pecans
¼ tsp Salt
¼ cup Butter, melted
1 tsp Vanilla

Beat egg, corn syrup, sugar and salt.  Melt butter and vanilla together.  Mix the butter and vanilla into the egg mixture.  Pour into small unbaked pie crust.  Put pecans on top and allow the pecans to settle and even out.

Bake at 375°F for 45 minutes.
